The ultimate low carb, no-cook recipe, these smoked shrimp salad lettuce cups are perfect for a quick and easy lunch or brunch recipe. Made with smoked shrimp and old bay seasoning, these salad lettuce wraps are naturally high protein, gluten free and low carb.
In a medium bowl, add the chopped shrimp, celery and onion; set aside.
In a separate small bowl, whisk together the yogurt, mayo, lemon, and old bay. Check for seasoning and add salt and pepper to taste. Pour on top of the shrimp mixture and toss well. Adjust seasoning to taste before serving in lettuce cups. Garnish with fresh parsley to serve.
