Sheet Pan Pork Chops with Apples, Onions, and Sweet Potatoes
The ultimate no-mess sheet pan dinner recipe, pork chops are rubbed with olive oil and herbs then roasted with apples, onions and sweet potatoes. You won't believe how delicious or easy this pork recipe is to make!
2tablespoonsfresh poultry herbs (such as rosemary, thyme, sage)minced
salt and pepperto taste
Instructions
Pre-heat oven to 350 degrees. Line a large baking sheet with foil the spray with cooking spray.
Mix together half the olive oil (two tablespoons) with the fresh herbs, garlic, salt and pepper then rub pork chops evenly to coat on both sides. Place in single layer on baking sheet.
Scatter the apples, onions and sweet potatoes around the pork chops. Drizzle with 2 tablespoons of the olive oil, salt and pepper to taste then mix well with hands. Bake until pork is golden and cooked through, about 25-30 minutes depending on thickness of pork.
Notes
Serving is 1 pork chop and 1 cup apples, potatoes and onions. This recipe is delicious with butternut squash, acorn squash or pears!
