Place all of the lentil salad ingredients in a large bowl (cooked lentils through minced parsley); set aside.
In a small bowl, whisk together the red wine vinaigrette then drizzle over the lentil salad. Toss well to coat then check for seasoning. Adjust accordingly before serving.
Notes
This lentil salad is great for prepping ahead for a busy day lunch or to bring to a picnic or BBQ. It's also great with chicken or chickpeas.
