Lebanese Fattoush Salad
Fattoush is a Middle Eastern salad made with toasted pita bread. Mine is given a flavor boost by using za'atar to season the pita chips.

large pita bread
cut into 2 inch pieces

extra virgin olive oil

Instructions
Pre-heat oven to 350 degrees.
Line baking sheet with foil and spray with non-stick spray.
In a large bowl or plastic bag, evenly coat pita pieces with olive oil, za'atar and salt.
1 inch large pita bread,
1 tbs extra virgin olive oil,
1 tbs za'atar,
1/2 tsp salt
Spread pita in even layer on a baking sheet and bake for 10-12 minutes or until nicely browned.
While pita bread is baking, prepare

Crumble toasted pita chips over the salad and toss well before serving. (Also taste great dipped in
hummus
!)
Notes
Please Note:
Very important that the pita is spread in an even layer to allow them to become crispy. Use two pans or bake in rounds if necessary.
