Ingredients

large butternut squash
peeled, seeded and cut in 1 inch pieces
2
tablespoon
balsamic vinegar
1
tablespoon
chipotle peppers in adobo sauce
minced
1
tablespoon
extra virgin olive oil
2
tablespoon
honey
½
teaspoon
salt

Instructions
Pre-heat oven to 450 degrees.
Line baking sheet with tin foil and set aside.
Meanwhile, wisk together vinegar, peppers, olive oil, honey and salt in a large bowl.
Add squash cubes to honey mixture and stir well.
Pour squash on to baking sheet and spread into an even layer.
Bake for 15-20 minutes turning once.
