Make this pumpkin spice high protein granola recipe for a healthy, crunchy breakfast or snack. Packed with protein, warm fall spices, and real pumpkin, it’s easy to make, naturally sweetened, and perfect for meal prep, yogurt parfaits, and lunchboxes.
Preheat oven to 325 degrees. In a large bowl, mix together oats, walnuts, pumpkin seeds and flax seed meal. In a medium bowl, whisk together all remaining ingredients (protein powder through olive oil). Pour over the oats and nuts then toss well to evenly coat.
2 cups oats, 1 cup walnuts, 1/2 cup pumpkin seeds, 1/2 cup flax seed meal, 1/2 cup vanilla protein powder, 1 tablespoon pumpkin pie spice, 1/4 teaspoon salt, 1/3 cup honey, 1/3 cup extra virgin olive oil
Spread mixture in an even layer on a baking sheet and bake until golden, about 30 minutes (depending on how your oven runs I'd start watching at 20 minutes to prevent burning). Let cool completely before serving.

If you don’t have pumpkin pie spice on hand, you can make your own. For 1 tablespoon, mix together 2 ¼ teaspoons cinnamon, ½ teaspoon ginger, ⅜ teaspoon nutmeg, ¼ teaspoon cloves, ¼ teaspoon allspice, and a tiny pinch of black pepper. Use just as you would store-bought pumpkin pie spice.
