These juicy Thai chicken satay skewers with a creamy peanut dipping sauce are perfect for an easy weeknight dinner or crowd-pleasing appetizer. To make simply marinate, thread and cook in minutes under the broiler or on the grill for a smoky, bold flavor.
Wisk together yogurt with ginger, curry powder, garlic, salt and pepper before pouring into a large glass dish or plastic bag. Add chicken breast tenders and marinate in the refrigerator for 30 minutes or overnight.
1 pound chicken breast tenders, 1 cup whole milk plain yogurt, 1 tablespoon ginger, 1 tablespoon curry powder, 2 cloves garlic, salt and pepper
To prepare sauce, combine peanut butter with chili garlic paste, brown sugar, soy sauce and lime juice. Use a wisk to combine until smooth. Add hot water to thin out the sauce - feel free to add more or less to taste.
1/4 cup creamy natural peanut butter, 1 teaspoon sambal oelek, 1 teaspoon brown sugar, 1 tablespoon reduced-sodium soy sauce, 2 tablespoons lime juice, 1/4 cup hot water
When ready to cook chicken, turn grill or broiler on high. Broil or grill for 5 minutes per side and serve with peanut sauce on side.

I love to garnish these with fresh cilantro or scallions to serve. Leftovers are great serve in a pita wrap or with naan bread. Feel free to use boneless, skinless chicken thighs if you prefer over chicken breast tenders.
