This hearty, whole grain salad is made with bulgur wheat, dried cherries, feta and scallions. Ideal for prepping ahead, this dish tastes better over time!
In a large bowl, toss together bulgur, dried cherries, scallions, feta and arugula.
In a separate small bowl, whisk together olive oil, lemon juice, garlic, salt and pepper. Pour vinaigrette on top of the bulgur salad and toss well. Serve immediately or store in the refrigerator for up to 5 days.
