Brie is topped with a sweet and tart apple cherry compote then baked until slightly melted and gooey. Perfect to serve at parties, holidays or date-night-in, this easy appetizer recipe is always a crowd favorite!
Pre-heat oven to 350 degrees and place brie in a baking dish; set aside.
While oven is pre-heating, begin making the compote. To start, heat a small sauce pot over medium-high heat and drizzle with olive oil. Add in the onions, garlic, and pinch of salt and pepper. Sauté until onions become translucent, about 6-7 minutes. If you have a couple sprigs of fresh thyme, toss them in now.
To the pan, add in the remaining ingredients (diced apple through whole grain mustard) and stir well. Bring mixture to a boil then reduce to simmer. Cook down until apples become tender and cherries begin to plump up, about 15-20 minutes.
Pour apple cherry compote on top of brie then bake until brie begins to melt, about 10-12 minutes. Serve with baguette slices.
