That’s why this Chicken Satay with Peanut Sauce has become one of my go-to holiday appetizers (along with my butternut squash crostini and hot honey baked brie), especially when I’m shopping at D&W Fresh Market for everything I need in one stop.

One of my favorite things about shopping at D&W Fresh Market, especially during December, is how easy they make holiday cooking. Whether you’re planning a full Christmas menu or just need a few standout appetizers, D&W has you covered.

For this recipe, I picked up:

  • Fresh, high-quality boneless chicken from the meat department
  • Fresh ginger, garlic, and herbs from the produce section
  • Pantry staples like peanut butter, soy sauce, and brown sugar

Ingredients

  • For the chicken: chicken tenderloins, plain yogurt, ginger, curry powder, garlic, salt, and pepper.
  • For the peanut sauce: peanut butter, chili paste, brown sugar, soy sauce, lime juice, and hot water.

How to Make Chicken Satay with Peanut Sauce

Step 1. Start by making your marinade for the chicken by grating your garlic and ginger using a microplane. Mix it in a bowl with the yogurt and curry powder.

Step 2. Marinate your chicken for at least 30 minutes, then take wooden skewers and put a single tenderloin on each skewer.

Step 3. Once all of your chicken tenders are skewered, put them on a prepared baking sheet. Grill or broil in the oven on high for around 5 minutes per side.

Step 4. While chicken satay is cooking, make the peanut sauce. Start by juicing your lime, and adding the lime juice to a bowl with the peanut butter.

Step 5. Then stir in the sambal oelek, soy sauce, brown sugar, and hot water.

Step 6. Next whisk together until fully combined and set aside until chicken is finished cooking.

  • 1 pound chicken breast tenders
  • 1 cup whole milk plain yogurt
  • 1 tablespoon ginger grated
  • 1 tablespoon curry powder
  • 2 cloves garlic grated
  • salt and pepper to taste

Instructions
 

  1. Wisk together yogurt with ginger, curry powder, garlic, salt and pepper before pouring into a large glass dish or plastic bag. Add chicken breast tenders and marinate in the refrigerator for 30 minutes or overnight.
    1 pound chicken breast tenders, 1 cup whole milk plain yogurt, 1 tablespoon ginger, 1 tablespoon curry powder, 2 cloves garlic, salt and pepper
  2. To prepare sauce, combine peanut butter with chili garlic paste, brown sugar, soy sauce and lime juice. Use a wisk to combine until smooth. Add hot water to thin out the sauce – feel free to add more or less to taste.
    1/4 cup creamy natural peanut butter, 1 teaspoon sambal oelek, 1 teaspoon brown sugar, 1 tablespoon reduced-sodium soy sauce, 2 tablespoons lime juice, 1/4 cup hot water
  3. When ready to cook chicken, turn grill or broiler on high. Broil or grill for 5 minutes per side and serve with peanut sauce on side.

Liz’s Notes

I love to garnish these with fresh cilantro or scallions to serve. Leftovers are great serve in a pita wrap or with naan bread. 
Feel free to use boneless, skinless chicken thighs if you prefer over chicken breast tenders.

    Excellent recipe, thank you! I just used a glass bowl instead of a zip lock, and I grilled on skewers. I should have gotten some cilantro as pictured. Served with coconut basmati rice and broccoli. Peanut sauce was a hit, although I used chili onion sauce instead of chili garlic – because that’s what I had!
