The ultimate low carb, no-cook recipe, these smoked shrimp salad lettuce cups are perfect for a quick and easy lunch or brunch recipe. Made with smoked shrimp and old bay seasoning, these salad lettuce wraps are naturally high protein, gluten free, and low carb.

With summer bringing the heat here soon, I love to have easy to prep ahead, high-protein meals that I can eat for lunch or dinner. I’ve shared before how much I love Big O’Smokehouse’s smoked shrimp and salmon as they are ready to eat, don’t require any cooking, and are versatile and delicious! Today I used their smoke shrimp to make these easy and quick Shrimp Salad Lettuce Cups!

Ingredients

  • Big O’ smoked shrimp: I used Big O’s classic smoked flavor, but they have cajun seasoned shrimp also which would be delicious, too!
  • Celery: Gives the shrimp salad some crunch and texture.
  • Onion: I love to use red onion for the bright color, and the sharp onion flavor it gives.
  • Greek yogurt: Plain Greek yogurt adds more protein to the salad instead of just using mayo.
  • Mayo: Acts as the base of the dressing.
  • Lemon juice: Bright, acidic, citrus flavor that cuts through the dressing and complements the shrimp.
  • Old bay seasoning: A mix of celery salt, paprika, and other spices, it’s a classic spice blend for seafood dishes.
  • Lettuce: I use bibb lettuce as my lettuce cups, as they are large and hold a good amount of the salad.

How to Make Smoked Shrimp Salad Lettuce Cups

Step 1. Whisk together the mayo, yogurt, lemon juice, old bay seasoning, salt, and pepper in a large bowl.

Step 2. Then add the chopped celery, onion, and smoked shrimp.

Step 3. Mix all together until evenly coated in the dressing.

Using an ice cream scoop to scoop shrimp salad onto a leaf of lettuce.

Step 4. Using a spoon or ice cream scoop, scoop shrimp salad into the middle of the large lettuce leaves.

Garnish with fresh parsley, or any other fresh herb you have on hand, then serve and enjoy your Shrimp Salad Lettuce Cups!

Ingredients
  

  • 16 smoked shrimp Big O' Smokehouse – diced
  • ½ cup celery diced
  • ½ cup red onion minced
  • ÂĽ cup plain Greek yogurt
  • ÂĽ cup mayo
  • 1 tablespoon lemon juice
  • 1 teaspoon old bay seasoning
  • salt and pepper to taste
  • bibb lettuce to serve
  • minced parsley optional garnish

Instructions
 

  1. In a medium bowl, add the chopped shrimp, celery and onion; set aside.
  2. In a separate small bowl, whisk together the yogurt, mayo, lemon, and old bay. Check for seasoning and add salt and pepper to taste. Pour on top of the shrimp mixture and toss well. Adjust seasoning to taste before serving in lettuce cups. Garnish with fresh parsley to serve.

Liz’s Notes

This salad is great for prepping ahead and will stay good in the fridge for up to three days. Great as a sandwich or wrap as well!

    That recipe sounds great. I wish I could purchase the smoked shrimp around here but I will try to find another brand. Your blog is one of my all-time favorites for recipes I will actually use and love.
