Heirloom Tomato and Cucumber Salad with Goat Cheese

A simple salad made with ripe heirloom tomatoes, garden fresh cucumbers and creamy goat cheese is drizzled with olive oil and a plenty of fresh basil.

I love summer for lots of reasons, but fresh produce at the farmer’s markets has to be at the top of the list. As someone who has battled with weight loss struggles, I learned to love salads and healthy fats, and farmer’s markets only helped with finding delicious, fresh veggies. This Heirloom Tomato and Cucumber Salad with Goat Cheese is a wonderful mix of crisp, refreshing vegetables, healthy fat from olive oil, and protein and flavor from goat cheese.

Ingredients

  • Heirloom tomatoes: Add a variety of colors, and a more complex, sweeter flavor than traditional tomatoes.
  • Cucumber: American cucumbers or English cucumbers work well in this salad.
  • Goat cheese: Salty and savory, crumbly and creamy, and the perfect topper for this salad.

How to Make an Heirloom Tomato and Cucumber Salad with Goat Cheese

Slicing heirloom tomatoes on a cutting board.

Step 1. Start by washing your produce, then slicing your heirloom tomatoes.

Lix slicing cucumber on a cutting board next to sliced tomatoes.

Step 2. Then slice your cucumber, you can peel the cucumber if you prefer as well.

Crumbling goat cheese into a small bowl.

Step 3. Take your goat cheese and crumble it into smaller, bite sized pieces.

Mincing fresh basil with a sharp knife.

Step 4. Arrange all of your ingredients on a plate, then top with fresh basil. Drizzle with olive oil, and season with salt and pepper.

  • 2 heirloom tomatoes any variety – sliced
  • 2 medium cucumbers sliced
  • ¼ cup goat cheese
  • ¼ cup fresh basil thinly sliced
  • 2 tablespoons extra virgin olive oil
  • salt and pepper to taste

  1. Arrange tomato and cucumber slices on a large platter and top with goat cheese crumbles and fresh basil.
  2. Drizzle with olive oil and season with salt and pepper to taste.

    The salad sounds excellent, but I would tend to want to add a little balsamic vinegar to it – because that’s what I’m used to – and it goes really well with basil and tomatoes. I’m really glad to see that someone is trying to counter the fat phobia that our society seems to have. Fear of fat is crazy, as long as the kind and amount you consume are reasonable. Our bodies do need healthy fats!

    I’ve been listening to Vinnie’s podcast for quite a while….it’s really great, absolutely hysterical and really makes you think about nutrition and the things you’re putting in your body. Can’t wait to read the book…..and try this amazing salad! Always love me some heirlooms!

    I’m interested in reading about how he stayed fit through illness. I have a hard time even keeping up with working out when I have the common cold.

      I’m not sure what Vinny’s thoughts on that are but I know I always just listen to my body. If I feel too weak or tired, I lay low. When in doubt, ask your doctor!
