Chicken and Black Bean Salad is a quick, wholesome meal made with shredded chicken, crisp greens, juicy tomatoes, and hearty black beans, all tossed in a zesty cilantro lime dressing.

Today’s salad is one of my favorite go-to lunch recipes. Chicken breast and black beans are a great source of lean protein. The beans also add fiber which helps keep you fuller, longer. For added flavor, I love to use fresh herbs such as cilantro. For a bit of a kick, I’ve added cumin, garlic and scallions.
With any entree salad, the key combination is veggies + protein + healthy fat (like with my Vietnamese beef salad). Olive oil is my healthy fat of choice today but avocado is another great source of healthy fats. No black beans? Try kidney beans instead!
Ingredients

- Black beans: Full of fiber and plant protein.
- Chicken: Chicken breast is a great lean protein to eat, or you can use a rotisserie chicken.
- Lettuce: Romaine or iceberg lettuce are my go to for salads.
- Vinaigrette: I like to make my own cilantro lime vinaigrette with some lime juice, olive oil, cilantro, garlic, and cumin.
How to Make Chicken and Black Bean Salad

Step 1. Start by washing and preparing the produce for your salad.

Step 2. In a salad bowl, combine lettuce, chicken, black beans, cucumber, and tomatoes.

Step 3. Make your vinaigrette by mixing olive oil, lime juice, garlic, cilantro, cumin, and scallions.

Step 4. Whisk together until emulsified, then drizzle over the salad.

Serve and enjoy your Chicken and Black Bean Salad.
