The creamy, melty cheese pairs beautifully with sweet golden onions and a touch of pepper jelly for the perfect balance of rich, savory, and subtly spicy. It’s the kind of recipe that looks impressive, but takes just minutes of hands-on time!
To scoop up all that warm, gooey brie, I love serving it with homemade crispy crackers made from wonton wrappers, tortillas, or even pita bread. They bake up in under 10 minutes and add the perfect crunch without any extra fuss. - Brie cheese: A soft, creamy, and mild flavored cheese, you can use a wheel or wedge of brie for this dish.

- Pepper jelly: Use mild or a slightly more spicy pepper jelly, whatever is your preference.
- Wonton wrappers: They bake to be super crispy and make for a fun twist on a classic chip.

How to Make Baked Brie with Caramelized Onions

Step 1. In a sauté pan over medium high heat, cook your sliced onions in olive oil and a sprinkle of salt and pepper.

Step 2. Sauté for around 15 minutes until the onions are golden and caramelized, stirring often so they don’t burn.

Step 3. Then cut your wonton wrappers into triangles with a sharp knife and lay out in a single layer on a baking sheet.

Step 4. Next brush the wonton triangles with olive oil, and sprinkle with salt and rosemary. Bake until golden and crispy in the oven at 350 degrees.

Step 5. Then place your wheel of brie in the center of a baking dish, and top with the pepper jelly and caramelized onions.

Step 6. Bake at 350 until for around 15 minutes until the cheese starts to melt and bubble.

Serve alongside the rosemary seasoned wonton chips, baguette slices, or crackers, and enjoy your Baked Brie with Caramelized Onions!

- Heat half of the olive oil (2 tablespoons) over medium high heat in a deep skillet and add onion slices. You can prepare the ingredients ahead of time, and even assemble it in the baking dish, but I would wait to bake until right before you serve it.
The best way is going to be the oven, for the most even heat. If you’re in a pinch, you could also pop it in the microwave. But I recommend the oven method!
Yes! The rind is totally edible and I leave it on when baking a wheel or just a wedge of brie. It also helps to hold the cheese together while it melts!
