A riff off the ballpark classic, this sheet pan sausage, peppers, and potatoes dinner recipe is hearty, buttery, and full of flavor! The perfect busy weeknight dinner recipe!

My husband is a Bostonian and we spent many years there early in our relationship! I loved living in the city and so close to the coast. Our years in Boston has inspired many dishes, including my New England Baked Scallops and Boston Baked Beans.

Of course, living in Boston we have very fond memories of visiting Fenway Park. You can’t visit Fenway Park without trying one of their famous sausage and pepper subs. This Sheet Pan Sausage, Peppers, and Potatoes is a riff off the ballpark classic, made from the comfort of your own home!

Ingredients

  • Sausage: Pork sausage can be sweet, mild, or spicy. You can use whatever your preference!
  • Bell peppers: Caramelizes in the oven and amplifies the sweetness. I prefer red bell peppers as they are the sweetest.
  • Potatoes: When baked, they get a bit crispy on the outside, creamy and smooth on the inside.
  • Onion: White, sweet onion caramelizes quickly in the oven to add sweet, mild onion flavor.
  • Spices: Rosemary, oregano, garlic, salt, and pepper all flavor this dish and give it an Italian taste.

Easy Substitutions

  • You don’t have to use pork sausage, you can use turkey or chicken sausage instead!
  • You could easily throw in more veggies, or swap them out for different ones. Broccoli, carrots, sweet potato, or zucchini all roast deliciously in the oven.

How to Make Sheet Pan Sausage, Peppers, and Potatoes

Step 1. Start by cutting your potato and onion into bite size pieces.

Step 2. Then cut your bell peppers into bite sized pieces, and peel your garlic cloves.

Mincing fresh rosemary with a very sharp knife.

Step 3. Take your fresh rosemary and finely mince it.

Cut vegetables and sausage on a sheet pan.

Step 4. Take all of your chopped veggies and the garlic cloves and lay them on a sheet pan with the sausage. Drizzle with olive oil, and season with salt, pepper, oregano, and fresh rosemary. Toss in the oven for 30 minutes at 400 degrees.

Yes you can, making it dry and tough. Using a meat thermometer is a great way to ensure they’re fully cooked without overcooking them.

A riff off the ballpark classic, this sheet pan dinner recipe is made with hearty Italian sausage, buttery Little potatoes, and roasted bell peppers.

Ingredients
  

  • 4 links Italian sausage uncooked
  • 24 baby potatoes halved
  • 2 red bell peppers seeded and sliced
  • 1 large yellow onion diced
  • 12 cloves garlic peeled, whole
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons fresh rosemary minced
  • 1 teaspoon dried oregano
  • 1 ½ teaspoons salt
  • 1 teaspoon pepper
  • minced parsley optional garnish

Instructions
 

  1. Preheat oven to 400 degrees and spray a baking sheet with cooking spray. Place the sausage links on the cooking sheet whole or remove from casing and break into large chunks.

  2. Scatter sheet pan with potatoes, peppers, onions, and garlic. Drizzle with olive oil, rosemary, oregano, salt, and pepper. Mix well with hands to coat evenly. 
    24 baby potatoes, 2 red bell peppers, 1 large yellow onion, 12 cloves garlic, 2 tablespoons extra virgin olive oil, 2 teaspoons fresh rosemary, 1 teaspoon dried oregano, 1 1/2 teaspoons salt, 1 teaspoon pepper
  3. Bake for 30 minutes or until sausage is cooked through and potatoes are golden brown. Garnish with parsley to serve if you wish.

    I’ve made this a few times and it’s a family favorite. It’s in the oven now. I use whatever sausage I have on hand. Tonight I’m using bratwurst and spicy Italian sausages. I increase the sausages to 6 or 7 because it’s so good left over (if there are any). I just read that you can substitute carrots. I wish I’d thought of that! It’s a forgiving recipe. Use what you have, and it’ll work just fine.

    Thank for the recipe. I did not have all the ingredinets on hand, so went with what I had. Chicken kale Sausage from Publix, Sweet potato, baby red potato, onion and Brussel Sprouts. So so good. Made extra for meal prep this week. Now my meals are ready to go. Thanks…will look to use sheet pan meals more often!!

    This was delicious and exceeded my expectations! With my pantry running low, I had a pack of bratwursts in the freezer, 2 lonely green peppers in the vegetable drawer, and 3 potatoes hiding under the cabinets. I googled those 3 ingredients and found this. I removed the skin from both the sausage and potatoes and cut them into equal sized chunks. I did not have onions, but added sliced mushrooms. I used some onion powder and dried chopped onions too, along with Italian seasoning and paprika. I was surprised how everything cooked to perfection, together, and in just 30 mins. For an on the fly dinner, my family LOVED this.

    How delish! I added sliced carrots, reduced the oil to 1 Tbs. and added green pepper. Used 2 sheet pans to eliminate crowding/steaming risk. Thanks for the recipe. My sheet pans will get some extra work!
