Brekkie bliss balls

Weetbix bliss balls are the perfect on-the-go breakfast or snack for a school lunch box. But they’re also just as good for a 3pm pick-me-up in the office. The best thing about them? The weetbix balls only take 15 minutes to prepare.

Attention kids! When you’re cooking, there should always be an adult with you, especially when using knives, a hot stove, boiling water, electrical appliances or the oven.

Crumble Weet-Bix into a small bowl. Peel banana, then coarsely chop. Remove seeds from dates, then coarsely chop.

Place seed mix in the bowl of a food processor and pulse until seeds are chopped into smaller pieces.

Add Weet-Bix, banana, dates, vanilla, cinnamon and 2 tablespoons of the coconut to the food processor bowl with the seed mix. Process until mixture just starts to clump together.

4.

With clean, damp hands, roll heaped tablespoons of the mixture to make 16 balls.

5.

Place remaining coconut on a plate. Roll weetbix balls lightly in coconut to coat. Refrigerate for 1 hour or until chilled and firm.

The weetbix balls can be stored in an airtight container in the fridge for up to 1 week.
