Heat oil in a large frying pan; cook pork, in batches,until browned. Transfer to a 4.5-litre (18-cup) slow cooker.

Add stock, wine, onion, garlic and rosemary to cooker; stir to combine. Top with potato. Cook, covered, on low, 8 hours. Skim fat from surface; stir in olives. Season to taste.
This recipe is cooked in a slow cooker on low over 8 ½ hours.
