Air Fryer Queen Steph De Sousa shares her veggie nachos recipe!
“Nachos night, but make it better!” says Steph. “Super fresh and packed with flavour. They’re veggie-packed, cheesy, and ridiculously good. Here’s how to make them.”

In a hot pan with some oil, cook onion, capsicum, and corn until slightly caramelised. Add taco seasoning or spices and cook for 30 seconds. Add tomatoes, carrots, zucchini, and black beans. Cook for about 10 minutes, stirring occasionally, until most of the liquid has evaporated. Stir in spinach and cook until wilted. Season with salt and pepper.
To make the tortilla chips, cut your tortillas into triangles. Spray with spray oil and sprinkle with salt. Pop in your air fryer 180C for 5 to 7 minutes. I like to do this in batches.
For the salsa, combine avocado, cucumber, tomato, green onions, coriander, lime juice, salt, and pepper. Stir well.
Load the veggie nachos mix into the middle of a baking dish, smother with mozzarella, and pop in the oven or under the grill until the cheese is melted and bubbly.
Arrange tortilla chips around the edge of a baking dish. Pile the salsa on top of your veggie nachos and, if you like, add a dollop of sour cream. Enjoy!
