The spicy sweetness of this tomato and sweet chilli relish is tempered with vinegar, which also serves to intensify the natural flavour of the tomatoes.

Tomato and sweet chilli relish

Heat oil in large saucepan; cook onion, stirring, until soft. Add remaining ingredients; cook, stirring, over high heat, without boiling, until sugar dissolves.

Bring to the boil. Reduce heat; simmer, uncovered, stirring occasionally, about 40 minutes or until relish is thick.

Spoon hot relish into hot sterilised jars; seal immediately. Label and date jars when cold.
