Method

1.Cook peas in boiling salted water for 1 minute; drain. Place in a bowl of iced water until cold; drain well.
2.Heat the oil and garlic over medium heat in a large frying pan. Cook the peas, stirring, until heated through. Remove from the heat and stir in mint and rind, season to taste with salt and pepper.
