This pork loin chop recipe is one of our all-time favourite fast dinners for one! It is equally delicious with a fish or chicken fillet too.

Combine garlic, oregano, oil, rind and juice on a plate, season with salt and freshly ground pepper. Add pork and toss to coat.

GREEK SALAD arrange tomato, cucumber, capsicum, onion, olives and fetta on a serving plate. Drizzle with combined oil and lemon juice.
3.
Cook pork on a heated oiled grill plate (or grill or barbecue), turning and brushing with remaining garlic mixture, for 3-4 minutes each side or until cooked as desired.

Place pork on top of Greek Salad, sprinkle with parsley leaves.
Cut top off onion, leave root end intact. Remove skins. Cut in half lengthways; place flat-side down. Cut parallel vertical slices, starting just after the root end. Holding the onion on top with one hand, make parallel horizonal cuts through the slices. cut thin slices crossways, into a fine dice.
