Dainty finger sandwiches with tasty fillings are great for parties and can be made a few hours ahead, as long as you keep them covered and chilled. Try these two simple, yet delectable fillings.

Chicken, celery and walnut mayonnaise

1.

In a medium bowl, combine chicken, celery, walnuts, parsley and mayonnaise. Mix well and season to taste.

Spread one slice of bread with the chicken mixture and top with lettuce leaves. Butter a second slice of bread and lay it on the lettuce to create a single sandwich.

Repeat with more chicken mixture and cos, finishing with the third slice of bread. Repeat with the remaining chicken, bread and cos to make more sandwiches.

4.

Cover and chill sandwiches until ready to serve, then carefully cut off the crust and cut into ribbons, squares or triangles.

Prawn cocktail sandwiches

Combine prawn meat with mayonnaise, sauce, zest, capers, paprika and seasoning.

6.

Spread the first slice of bread with prawn mixture to make an even layer and top with cucumber slices. Top with another slice of bread and repeat with prawn mixture and cucumber, finishing with bread.

7.

Cover and chill sandwiches until ready to serve, then carefully cut the crust off and cut the sandwich into ribbons, squares or triangles. Garnish with cracked pepper.
