Prawn pasta salad

Give retro prawn pasta salad a zesty makeover with lime, taco seasoning and fresh jalapeños. This crowd-pleaser combines prawns with creamy avocado and crunchy celery, all tossed in a tangy mayo dressing. Plus, this pasta salad can be made ahead for stress-free entertaining.

Cook the pasta in boiling salted water until al dente. Drain and rinse briefly under cold water.

To make the dressing, whisk together mayonnaise, lime juice, taco seasoning and olive oil in a small bowl.

On a serving platter, arrange the pasta, prawns, tomatoes, celery, avocado and onion. Add two-thirds of the dressing and toss gently.

4.

Cover and refrigerate until ready to serve.

5.

Just before serving, sprinkle with extra taco seasoning, jalapeños and coriander sprigs. Serve prawn pasta salad with remaining dressing.

If you don’t want to use store-bought taco seasoning, swap in 1 tablespoon smoked paprika and ½ teaspoon each of onion and garlic powder.

This salad recipe will work with any shape pasta that can carry sauce well.

Can this prawn pasta salad be made ahead?

This salad can be prepared the day before – just leave the avocado out and have the dressing in a jar ready to go.
