This curried egg sandwich recipe is an old-school favourite, pairing white bread with mashed eggs, mayonnaise and curry powder, plus iceberg lettuce.

Method
Cook eggs in large saucepan of boiling water about 7 minutes or until hard. Drain under cold water, then peel and chop egg coarsely.
Use a fork to mash egg, add mayonnaise and curry powder in medium bowl, season to taste.
Sandwich egg mixture and lettuce between bread slices. Cut crusts from bread, cut each sandwich into four triangles to serve.
