Method
1.Cut carrot into long, thin strips. Thinly slice onions, capsicum and chicken.
2.Place the noodles in a large heatproof bowl, cover with boiling water, stand only until tender; drain.
3.For the chilli lime dressing, combine all ingredients in a screw-top jar; shake well.
4.Add the noodles and the chilli lime dressing to the chicken mixture, add the herbs and toss gently.
The dressing can be made a day ahead. The recipe is best made just before serving.
