Ingredients: 1/2 cup (125ml) olive oil; 1/3 cup (80ml) lemon juice; 6 (150g) shallots, thinly sliced; 4 clove garlic, crushed; 1 teaspoon ground cumin; 1 fresh long red chilli, thinly sliced; 1/4 cup finely chopped fresh coriander; 1/4 cup finely chopped fresh mint; 1/4 cup finely chopped fresh flat-leaf parsley
