Method
1.Peel, core and slice apple thickly. Place apple, cinnamon and the water in medium saucepan; bring to the boil. Reduce heat, simmer, uncovered, minutes.
2.Add apricots and sultanas to pan; simmer, covered, about 5 minutes or until apple is tender
3.Meanwhile, combine oats, milk and the boiling water in another medium saucepan; bring to the boil. Reduce heat, simmer, uncovered, stirring occasionally, about 5 minutes or until mixture thickens.
4.Serve porridge with compote; sprinkle with brown sugar.
Any dried fruit, such as prunes, peaches or pears, could be used instead of the apricots.
