Cook pasta in a large saucepan of boiling water for 2 minutes less than the cooking time given on the packet; drain. Transfer pasta to a large bowl; stir in oil, vinegar and garlic.

Just before serving the orzo salad, add remaining ingredients, season to taste; toss to combine.

Orzo is a small, oval-shaped pasta. It may be referred to as risoni, although this tends to be a slightly smaller pasta.
How to toast pine nuts
To toast pine nuts, place in a small cold frying pan, place over medium heat. Cook, stirring constantly, for about 4 minutes or until golden brown. Alternatively, if you have the oven on you can toast on a baking tray for 5 minutes or until golden.
