Method
1.In a medium saucepan of boiling water, cook beans until just tender. Rinse under cold water; drain. Divide beans into eight equal bundles.
2.Place one slice of prosciutto on board; top with one bundle of beans. Wrap prosciutto over beans; continue rolling to enclose beans tightly. Repeat with remaining prosciutto and beans.
3.Cook bean bundles in heated, oiled, large frypan until prosciutto is crisp. Remove from pan; cover to keep warm.
4.Melt butter in same pan; cook capers, stirring, 1 minute. Serve bean bundles drizzled with caper mixture. Season.
These delicious salty bundles are also fantastic with a squeeze of lemon and a sprinkle of chopped parsley.
