Massaman sausage curry
Heat half the oil in a large shallow frying pan, cook the sausages over medium high heat until browned all over but not cooked through. Remove sausages from the pan. Reduce heat to medium, add the onion, cook, stirring, until softened but not coloured.
Add the curry paste, cook, stirring, for 1 minute or until fragrant. Add the coconut milk, stock, cinnamon, potato and sausages to the pan and bring mixture to the boil. Simmer coconut curried sausages, covered, for 30 minutes or until the potatoes are tender.
Stir in sugar and fish sauce.
Serve coconut curry sausages topped with coriander, fried shallots and roasted chopped peanuts. Accompany with steamed jasmine rice, roti and naan bread if desired.
