Method
1.Heat ½ the oil in wok over medium-high heat, stir-fry garlic and chilli for about 1-2 minutes, or until lightly browned; remove. Reheat wok, stir-fry brown onion for about 2 minutes, or until soft, remove.
2.Reheat wok, stir-fry green onion for about 2-3 minutes, or until soft, remove.
3.Add remaining oil to wok, heat over medium-high heat, cook paste for about 1 minute, or until fragrant. Stir-fry lamb, in batches, for about 3-5 minutes, or until tender.
4.Return lamb and onions to wok with remaining ingredients, stir-fry until hot.
5.Serve lamb mixture topped with garlic and chilli.
Best made close to serving.
