1.Bring a large saucepan of water to boil. Add salt and green beans. Cook until bright green, about 2 minutes. Remove with a slotted spoon, refresh under cold water and transfer to a bowl.
2.Return water to boil, add sugar snaps and peas and cook for 1 minute. Remove with a slotted spoon and refresh under cold water. Add to bowl with beans.
3.To make dressing, combine lemon juice with a good pinch of salt. Whisk until salt has dissolved. Gradually whisk in oil until mixture has emulsified.
4.Add dill, parsley and green onions to beans and peas and pour half of the dressing over. Toss well and season.
5.To serve, place lettuce in a large bowl and arrange vegetables over. Scatter with feta, drizzle with remaining dressing and garnish with extra dill sprigs.
