1.Wash chicken, put in saucepan, cover with water, add salt and pepper and peeled and sliced ginger. Cover, bring to boil, reduce heat, simmer gently 40 minutes, or until tender. Allow chicken to stand in water to cool.
2.Drain chicken, refrigerate until firm then cut into small serving-size pieces. It is easier to cut the chicken when it has been refrigerated.
3.Combine oil, extra ginger and finely chopped shallots in screw-top jar, season well with salt and pepper, shake to combine, refrigerate several hours. Shake again before using.
4.To serve, spoon sauce over chicken; garnish, if desired, with extra sliced shallots.
