Method
1.Pour boiling water and salt into a heatproof bowl; add the couscous and stand for 5 minutes.
2.For the dressing, combine the oil, vinegar, juice, garlic and salt in a screw-top jar and shake well to combine.
3.Fluff the couscous with a balloon whisk or fork to separate grains. Add onions, tomatoes, olives and herbs.
4.Just before serving the salad, add the dressing and toss well.
This recipe can be prepared several hours ahead.
