Method
1.Place beans, potato, onion, stock and water in a heavy-based saucepan on high heat and bring to the boil. Reduce heat to low and simmer for 12-15 minutes, or until potatoes are cooked. Strain, reserving liquid and a few potato pieces for garnish, if desired.
2.Place beans, potato and onion in a blender and puree until smooth, adding a little reserved liquid, if necessary (the mixture should still be thick, like a soft polenta or loose mashed potato).
3.Meanwhile, preheat a barbecue or grill. Wrap each prawn in a slice of pancetta. Char-grill for 1-2 minutes on each side, or until just cooked.
4.Divide puree among 4 bowls and top each with 3 prawns and diced potato, if using. Drizzle with olive oil and serve immediately.
