Method
1.To make mayonnaise dressing, stir ingredients in a small jug until smooth.
2.Cook bacon in large frying pan until crisp; drain on absorbent paper. Chop coarsely.
3.Combine bacon, tomato, lettuce and cheese in large bowl; toss gently. Drizzle salad with dressing.
4.For a packed lunch, prepare the salad and the dressing the night before and keep, covered, in separate containers, in the refrigerator. The next day, pack lunchbox and dressing with a freezer brick or frozen drink. Just before eating, drizzle salad with dressing.
