Asian crispy noodle salad

Packed full of fresh ingredients and mild spice, this tasty Asian salad combines crunchy noodles and crisp vegetables to create a delicious dish for lunch or dinner.

Method

1.Make sesame soy dressing. Place ingredients in a screw-top jar; shake well.
2.Place wombok, water chestnuts, snow peas, capsicum and fried noodles in a medium bowl; toss to combine.
3.Divide salad between serving bowls; sprinkle with cashews and coriander, drizzle with dressing. Season to taste.

For extra heat add 1 finely chopped chilli to the dressing. Add the noodles just before serving, to prevent them going soggy
