Method
1.Combine sugar, measured water, ginger, mint and rind in a medium saucepan. Stir over a low heat until the sugar is dissolved. Bring to the boil; reduce heat, simmer, uncovered, without stirring, for 10 minutes. Strain into a jug; cool for 10 minutes. Refrigerate, covered, until cold.
2.Just before serving, place syrup and remaining ingredients in a large bowl; toss gently to combine.
Not suitable to freeze or microwave.
