Method
1.Combine ingredients in medium bowl set over medium saucepan of simmering water; do not allow water to touch base of bowl. Whisk vigorously and continually about 5 minutes or until sauce is thick and creamy.
2.For lime flavoured sabayon, add 1 teaspoon finely grated lime rind and 2 teaspoons lime juice to sabayon ingredients before whisking over simmering water.
3.For coffee sabayon, dissolve 2 teaspoons instant coffee granules with ¼ cup water in small jug; use instead of wine with ingredients before whisking over simmering water.
A flat sabayon is the result of underwhisking. You must whisk vigorously to incorporate as much air as possible. Cooking the mixture too quickly will make the sabayon too thick; prevent this by keeping the water in the saucepan at a low simmer.
