For the sumac onions, combine onion, sumac, lemon juice and salt flakes in a small bowl. Set aside until ready to serve.

Halve the watermelon cutting 2 or 3 thin wedges. Peel and chop remaining watermelon coarsely.

PRESERVED LEMON DRESSING: Place ingredients in a screw-top jar; shake well. Season to taste.

Arrange the chopped watermelon, prawns, cucumber, radishes, fetta and herbs on a serving platter. Top with drained onions and pistachios. Drizzle with Dressing and decorate the platter with the watermelon wedges.
Can this prawn and watermelon salad be made in advance?
This salad should be made on the day of serving, but the Preserved Lemon Dressing can be prepared up to a week ahead and stored in the refrigerator. Dress the salad with the dressing just before serving.
