Bring a small saucepan of water to the boil over high heat. Gently lower the eggs into the water, reduce heat to medium. Cook the eggs for 7 minutes for soft-boiled or until cooked to your liking. Drain well. Refresh under cold water.
Place 2 tablespoons of the oil in a large non-stick frying pan. Add ham, cook, over medium high heat, stirring, for 5 minutes, or until starting to crisp. Add remaining oil, the garlic and the bread, continue to cook for 5 minutes, or until bread is golden and ham is crispy. Set aside to cool.
ANCHOVY DRESSING Place the anchovy, garlic, parmesan, mustard, Worcestershire sauce and lemon juice in a small food processor and process until smooth. Add the mayonnaise and process until well combined, add 1-2 tablespoons of water to loosen to desired consistency. Season with freshly ground black pepper.
Peel the eggs and cut in half.
To serve, combine the lettuce, half the ham and croutons on a large shallow serving bowl. Add one quarter of the Anchovy Dressing and toss well to coat. Arrange eggs on top, scatter with remaining ham and croutons. Sprinkle with parmesan and serve with remaining Anchovy Dressing.
