Once you try this ham and three cheese toastie you’ll never go back! Decadently flavoured with not one, but three cheeses – mozzarella, cheddar and parmesan – this toasted sandwich is completely moreish. Plus, it’s a simple way to use up leftover Christmas ham.

PARMESAN BUTTER Combine softened butter and parmesan in small bowl.
Spread Parmesan Butter onto one side of each sourdough slice. Place buttered side down on a chopping board.
Spread the bread with aioli and mustard. Top with slaw, pickles, cheeses and ham. Season with freshly ground black pepper and sandwich with remaining bread, buttered side out.
Heat a large non-stick frying pan over medium heat. Add the sandwiches, cover with a piece of baking paper or foil, and weigh the sandwiches down with a plate or tray. Cook for 5 minutes, or until golden brown. Carefully turn, and cook for 5 minutes, or until golden brown and cheese is melted.
Skewer pickle with a toothpick and push into top of sandwich. Serve immediately.
What is a cornichon?
This toasted ham and cheese sandwich is topped with a cornichon or pickle for an extra burst of flavour. Cornichon is French for gherkin. It is a very small variety of pickled cucumber; they are available from delicatessens and most major supermarkets.
