1.Preheat oven to 180°C. Grease oven trays.
2.Beat butter, extract, sugar and egg in a small bowl with an electric mixer until smooth. Stir in wheatgerm and sifted flours.

4.Place balls on trays about 3cm apart; flatten with a floured fork.
5.Bake cookies for 12 minutes or until lightly browned. Leave on trays for 5 minutes before transferring to wire racks to cool.
These cookies can be stored in an airtight container for up to 1 week.
