Pfeffernüssen translates from German as “pepper nut” biscuits, they are a variation on a type of German gingerbread known as “lebkuchen”. Pfeffernüssen are extremely hard when they are first baked and benefit from being dunked into liquid before eating, however, they do start to soften after a day or two.
