This no bake lemon slice recipe perfectly balances sweet and tart, creating a wonderfully flavoursome lemon slice. It’s also simple to make, for a welcome treat that’s a great pick-me-up for afternoon tea.

Grease 19cm x 29cm slice pan, line base and two long sides with baking paper, extending paper 5cm over long sides.
Process 200g of the biscuits until fine. Chop remaining biscuits coarsely.
Combine butter, milk, rind and juice in small saucepan, stir over low heat until smooth.
Combine processed and chopped biscuits in medium bowl, stir in butter mixture. Press mixture firmly into pan refrigerate, covered, about 20 minutes or until set.
Meanwhile, to make lemon icing, stir ingredients in small heatproof bowl over small saucepan of simmering water until smooth.
Spread icing mixture over lemon slice. Refrigerate until firm before cutting into 24 squares.
How long does a lemon slice last in the fridge?

How to ensure a no bake lemon slice sets properly
The secret is patience! Press that biscuit base down really firmly – use the back of a spoon or measuring cup to get it compact. Then make sure you give it the full 20 minutes in the fridge before adding the icing. For the final setting, resist the temptation to cut too early. Keep the lemon slice in the fridge for 2-3 hours minimum, or overnight for the cleanest slices. The colder your fridge, the better it will set.
