1.Preheat the oven to 200°C. Lightly grease oven trays.
2.Beat butter, vanilla, sugar and 2tsp of the rind in a small bowl with an electric mixer until well combined.
3.Stir in polenta, then sifted flour in two batches until combined. Stir in lemon juice.
4.Knead dough gently on a floured surface until smooth. Divide in half and shape halves into two 20cm triangular logs. Cover and refrigerate for about 2 hours or until firm.
5.Cut logs into 1cm slices. Place triangles about 2cm apart on prepared oven trays. Sprinkle with remaining lemon rind.
6.Bake in a moderately hot oven, about 15 minutes, or until browned lightly. Stand for 5 minutes before transferring to a wire rack to cool.
