Method
1.Preheat the oven to 220°C.
2.Cut the onions into thin wedges and place in a baking dish with half the oil.
3.Trim the fat from the lamb.
4.Combine the sage, garlic, remaining oil, and salt and pepper in a small bowl.
5.Cut small holes in the lamb and press some of the herb mixture into the holes. Brush the remaining herb mixture over the lamb.
6.Place the lamb on the onions and bake about 20 minutes or until the lamb is cooked as desired. Remove from the oven and stand, covered with foil, for 10 minutes before serving.
This recipe is best made close to serving.
