Method
1.Preheat oven to 180°C (160°C fan-forced). Grease oven trays; line with baking paper.
2.Process pecan pieces until they are ground finely.
3.Beat butter, sugar, extract and ground pecans in small bowl with electric mixer until light and fluffy. Add egg; beat until combined. Stir in sifted flours, then chopped chocolate.
4.Roll rounded tablespoons of mixture into balls; place 7cm apart on trays, flatten slightly. Top with whole pecans.
5.Bake cookies about 20 minutes. Cool cookies on trays then drizzle with melted chocolate.
Brown rice flour retains the outer bran layer of the grain, which contains a valuable source of complex carbohydrates, vitamins, minerals and fibre. It has a slightly chewy texture and nut-like flavour.
