1.Preheat the oven to hot (220°C/200°C fan-forced). Score puff pastry sheet lightly using the tip of a sharp knife. Brush pastry with combined egg yolk and milk; sprinkle with the caster sugar. Cut into 4 squares. Place on a greased oven tray.
2.Using a mandolin or sharp knife, cut the unpeeled apples crossways in 5mm-thick slices. Place the sliced apples, overlapping if necessary, over the base of a large baking dish; dot with butter, sprinkle with sugar and cinnamon.
3.Bake pastry and apple for about 10 minutes or until pastry is puffed and browned. Remove the pastry from the oven. Turn apples over and bake for a further 10 minutes or until soft and browned.
4.Top the pastry squares with apples and drizzle with caramel mixture in dish. Serve with yogurt, or ice-cream, if desired.
