Air fryer hot honey salmon salad

Hot honey salmon meets juicy summer peaches in this air fryer dinner that’s ready in 30 minutes. It’s a little bit spicy, a little bit sweet and completely delicious.

This air fryer hot honey salmon salad is easy enough for weeknights yet impressive enough for a special dinner for two.

Ingredients

Heat a small saucepan over medium-high heat. Add quinoa and cook, stirring, for 2 minutes or until quinoa is lightly toasted. Add â…” cup (160ml) water and bring to the boil. Reduce heat to medium-low, cover and simmer for 15 minutes or until quinoa has absorbed all the liquid. Set aside to cool.

Meanwhile, combine smoked paprika, garlic, oregano, 2 tablespoons of the hot honey and 1 tablespoon of the oil in a small bowl. Season with salt and pepper. Brush over the salmon.

Preheat an air fryer to 200°C for 2 minutes. Add the hot honey salmon, skin side down, reduce heat to 180°C and cook for 8 minutes, or until golden and cooked as desired.

Whisk remaining hot honey and oil and the vinegar in a medium bowl. Reserve 1 tablespoon of the dressing. Add quinoa, green onion and spinach to remaining dressing in the bowl and gently toss.

Divide quinoa mixture between plates with the tomato, peaches and basil leaves. Top with the hot honey salmon and drizzle over reserved dressing.

How to cook this salmon recipe on the barbecue

You can also barbecue the hot honey salmon if it’s too hot to cook inside. To prevent the honey mixture from burning before the salmon is cooked, cut a piece of baking paper slightly larger than each fillet (place flesh side down initially) and cook on the flat plate over medium heat for 3-4 minutes each side.
